Nectarine and Avocado Salad

I swear by this salad, it’s so delicious! I’ve been making it all summer. I am so obsessed with nectarines, they’re so juicy I truly understand why *spoiler alert* Elio fucked a peach on Call Me By Your Name. Too crude? I’m not sorry.

What you’ll need: 🔪

  • 2 Plump and ripe nectarines
  • 1 Avocado
  • Iceberg lettuce (or any other crunchy lettuce)
  • Half a medium cucumber
  • Seed medley: I used sunflower, pumpkin, and pine nuts

For the dressing: 👗

As I’ve stated in my newsletter before, these instructions are base measures, I suggest you try and adjust to your personal taste. Learning how to salt to taste is very important in cooking unless the doctor has told you to minimize your sodium intake, salt will do you no harm. Explore and find your taste.

  • 1/2 cup White wine vinegar 
  • 5 Tablespoons of Extra Virgin Olive oil
  • Salt, pepper, and cayenne pepper to taste (I like it spicy, you can ditch the cayenne if you don’t but boo)
  • Half a small white onion (about 1/4 cup)

Put all these ingredients in a separate bowl, mix and adjust to taste. Slice up the white onion, whatever you do don’t ditch the onion because it makes the whole salad come together. Add the onion to the dressing so the onion can get a light pickle and set it aside.

Method: 🍅

Over your salad bowl, cut up the nectarines in wedges. Don’t discard the juices of the nectarines as they’ll add a lot of flavor to the salad. Cut up the lettuce in chunks and the avocados as well. I used Hass avocados because that’s what I had available. I like that they’re super creamy and add a soft texture to the salad. Cut the cucumber into cubes and add tot he salad. Mix everything together and add the dressing. Top with the seed medley 

So, what is it that makes this salad good? The sweet and acidic taste of the nectarines combined with the avocado blows my mind. Mixed with the onion and the vinegar, it’s somewhat of a fruity salsa flavor. I’ve made this salad so many times this summer, it’s definitely a staple for me.   🍑 ❤️🥑
