Fideuá

Summer is almost here and so are the seafood-heavy dishes. Enter fideuá. Similar to paella but with pasta instead of rice.

Here’s what you’ll need to make fideuá:

 

  • 500gr of  thick noodles (macaroni works great but thin noodles also work)
  • 1 medium white onion
  • 3 cloves of garlic
  • 250gr of raw baby shrimp
  • 500gr of cuttlefish or squid cut into small pieces
  • 1 lt of fish stock
  • 4 threads of saffron
  • Salt & pepper
  • Olive oil

Method

Preheat your oven to 340°F (170°C). Then what you want to do is wash your seafood thoroughly. After that, toast the pasta in the oven in a paella for about 10 minutes when your oven is hot.

While the pasta is in the oven toasting, sautee the shrimp in olive oil with garlic and onion. When the shrimp is pink set it aside. Cook the cuttlefish or squid with olive oil, salt, and pepper for 10 to 15 minutes. When the texture is soft it means that it’s done, if you taste it and it’s tough that means it needs more time to cook. Add the shrimp, onion and garlic mix. When the pasta is toasted and golden add it to your mix.

Add the saffron threads and the fish stock. Taste the mix to make sure your salt and pepper levels are good, adjust if needed. Then pop it in the oven for 25 to 30 minutes. After the 30 minutes, taste a little of the pasta to check if it’s al dente. If the pasta is not up to your taste add it back to the oven for more 10 minutes.  When it’s done let the fideuá rest for 5 minutes covered.

Gather a group of your closest loved ones, oven a bottle of wine and serve them some delicious fideuá. Enjoy!
